Made your ham and leek cheesy bake for tomorrow nights tea. I cant wait! I used sweetcorn instead of mushrooms and quark

MEXICAN FEAST

STEAK ENCHILADA
------------------------
Serves 4
450g steak
1 green pepper
1 beef oxo cube
Salt and pepper
1 onion diced
1 clove garlic crushed,
1 tsp taco spice
1 'b free' wrap each for those on Sw - tortilla wraps for anyone else.
60g cheese (1/4 hea each)
2 tins taco spicy mixed beans - these we're from tesco, but most supermarkets do mixed beans in spicy sauce

I cut some steak into thin strips , fry lighted a pan and add beef , onions, peppers and garlic. Stir fry until beef goes brown.
Add crumbled oxo cube, salt and pepper, and taco spice.
Stir fry until cooked through ( a couple of minutes)

Stir in 1 and a half tins of beans into the beef mixture .

Open tortilla wraps and spoon beef mix down the middle , carefully fold up and turn over crease side down into ovenproof dish.
Pour over rest of the beans then grate cheese over top and bake until melted.


Refried beans were from a tin - old El Paso

Guacamole - from tescos in the chiller, 93 syns for quarter of a tub, I had 2 tsp.

Indian salad - chopped cucumber, tomatoes, red onion, lemon juice and coriander

SWEETCORN FRITTERS ( from Sam c recipe )

Makes 7 ! Blooming typical its an odd number, so they work out at 2 syns for the lot. (0.285 syns for 1, I had 4 so = 1.14 syns I counted it as 1.5)

2 eggs
2 cups of sweetcorn defrosted
1 tsp Thai spice
1/2 tsp chilli powder
1 small onion chopped finely
2 tbsp finely chopped coriander
1 tbsp lime juice
2 tsp of plain flour ( this is where the 2 syns come from)
Salt and pepper to season


Mix all ingredients in a bowl, roughly blend with hand blender
Spray a frying pan with frylight
Spoon some of the mixture on e pan as if you were making small pancakes.
Flip over when ready .

BANOFFEE MERINGUE

1 Weight watchers instant whip banoffee flavour (47 cals (2.5 syns) for half of the made up pack.)
1 meringue nest per person
1/2 banana per person
Squirty cream ( syns according to can, but usually 1 syn )
Caramel sauce ( I buy the ice cream caramel sauce which is around 1.5 syns per tsp
Milk from allowance or syn it.

Make the instant whip up according to instructions and chill.
When chilled for 10 mins spoon into nests , top with banana, then a squirt of cream and a tsp of toffee / caramel sauce.

I'm hoping that that is a typo- 47syns for half a pack of ww instant whip!!!!

EGG & HAM MUFFINS WITH BAKED BALSAMIC TOMATOES

Serves 1

2 slices ham chopped or 1 rasher bacon ( cooked)
2 spring onions chopped,
1 tsp chives chopped
14g Philly light ( 1 syn)
1 egg beaten
Black pepper
1 large tomato cut in half
2 tsp balsamic

Preheat oven gas 6 sprinkle balsamic onto tomatoes and season , cook until soft and browning
Beat egg and cream cheese together, stir in ham or bacon , spring onion and chives. Season with pepper
Pour into 2 silicone moulds and place in oven with the tomato for 10-15 mins.

CHICKEN SATAY NOODLES
---------------------------------

2 chicken breasts cut into desired pieces
1 pack of Amoy peanut satay stir fry sauce ( 5 syns per serving)
1 pack of sugar snap peas or mange tout
4 mushrooms sliced
1 red onion sliced
1/2 red pepper sliced
Some Chinese lettuce leaves shredded or I used some shredded Savoy cabbage
Pack of noodles

Spray pan with frylight and cook onions and red pepper.
Add chicken and cook for 5 mins.
Stir fry cabbage and mange tout and mushrooms.
Put noodles into a pan of water and cook.
Meanwhile empty satay sauce into the chicken mixture and heat through.
Serve with noodles and some Indonesian crackers

CHILLI GARLIC PRAWNS, CORIANDER & LIME CORN
---------------------------------------------------------------
Serves 2


1 pack of tiger prawns
2 cloves garlic chopped
1 red chilli sliced
1 tsp Paprika
Corn on the cob cobettes
1 tbsp of chopped coriander
1/2 lime

Spray a pan with frylight, add prawns, then when almost done add chilli and garlic. Stir fry until cooked, set aside.
Put corn into boiling water and cook until tender.
Drain water and return cobs to the saucepan. spray cobs with butter frylight, return to heat and keep turning until coated in butter frylight and add chopped coriander and lime juice .
Keep turning until browning .
