- in pasta sauces
- on pizza
- in salads
- crudities
- stuffed with rice/couscous
- roasted
- in sandwiches
- in omlettes
- in chilli

They are my favourite vegetable :)

You can chop and freeze them too!

A mixed pepper stir fry is always a nice way to use them up. Or when i wasn't on a diet I used to like to philly extra light, peppers and ground black pepper on a sandwich. Lovely and fresh tasting. They would prob be nice with dairylea as well though, so could be a healthy extra :)

You could still have that now, syn the cheese as it will be low and have the bread as a healthy B.

You could roast them and mix them with some couscous and chopped feta (Hex B) - just happens to be what I'm taking to work for lunch today!

:) Thanks for all the suggestions :)
I do use peppers a lot but as seemed to have so many I just wondered if there was something different I could do with them but I think I am going to roast some and some red onion and have with fish with a breadcrumb topping tomorrow and then have some chopped to snack and freeeze 1 or 2 for when I have forgotten to get some!
