Peppers

    So I had 4 peppers and then I won the raffle at SW and won 3 more peppers! Was just wondering if anyone had any suggestions of something nice to do with them?

    stuff them with cous cous yum yum, but them in meals like spag bol

    - in pasta sauces
    - on pizza
    - in salads
    - crudities
    - stuffed with rice/couscous
    - roasted
    - in sandwiches
    - in omlettes
    - in chilli

    They are my favourite vegetable :)

    You can chop and freeze them too!

    I all of a sudden have a craving for roasted peppers and onions and I dont have any :cry::cry:
    think I best go to bed ;)

    A mixed pepper stir fry is always a nice way to use them up. Or when i wasn't on a diet I used to like to philly extra light, peppers and ground black pepper on a sandwich. Lovely and fresh tasting. They would prob be nice with dairylea as well though, so could be a healthy extra :)

    Or why not try making them into a salsa with some tomatoes, herbs (bit of chilli if you like it) etc?

    You could still have that now, syn the cheese as it will be low and have the bread as a healthy B.

    Thanks brightonrosie. I seem to be forgetting that I don't have to abandon all my old meals because I'm on a diet :)

    You could roast them and mix them with some couscous and chopped feta (Hex B) - just happens to be what I'm taking to work for lunch today!

    :) Thanks for all the suggestions :)
    I do use peppers a lot but as seemed to have so many I just wondered if there was something different I could do with them but I think I am going to roast some and some red onion and have with fish with a breadcrumb topping tomorrow and then have some chopped to snack and freeeze 1 or 2 for when I have forgotten to get some!

    Debjk.....sorry for giving you a craving! Hope its either gopne or you get your peppers and red onions today! x
