Red Day Pork Loin Recipe Ideas?

    I am cooking a pork loin today but want something different than just plain pork & veg :sigh:

    Does anyone have any ideas on something exciting to do with it :)

    Slowly cutting out refined sugar and cooking more from scratch
    what about sweet & sour pork with noodles? There was a recipe for it in one of the sw magazines

    I did some on Friday in a piri piri marinade.

    For 400g pork loin / 4 people:
    3 tblsp sweet chilli sauce
    Zest of a lime (I used 1 tblsp lime juice)
    2 cloves garlic, crushed
    Tsp each of cumin and corriander

    Marinade for at least an hour and then oven bake for 20 minutes (or til cooked). Remove the pork to rest, add the juice of the lime to the sauce in the pan and reheat. Pour over the sliced pork.

    Had it with mini rosties and salad, and poured the sauce over the salad too.

    I think (I'm not 100 % sure!!) u could make up some stuffing (syns!) an put it on top of joint like a coat! Then get sum Parma ham and lay that on top of that!! I do that with pork fillet and it's yum! I then roast loads of root veggies with a spoon of honey thyme and fresh garlic ( just bulbs cut in half and chucked in!!) have that with mashed sweed and carrott
