Teasey just reminded me about the need for food to carry with you for early starts. I used to travel to Oxford from here in Dorset - about two and a half hours so early start. I was on South Beach diet at the time, and although a later didn't stick to it this recipe is really good. my variation.

10oz spinach, or a bit more if it really shrinks
2oz finely chopped peppers ( mix red and green)
2oz finely chopped onion
3 eggs, beaten
Tablespoon of Quark ( original has 4oz grated cheese, ok to use a bit less of this if you are on Conso I suppose)
Mixed herbs or tarragon

I some times add finely chopped mushrooms. Can add Tabasco too. Mix all together. Divide among 12 muffin cases. Bake at 180 degrees C or gas mark 4 for 20 mins.
Lighter version, separate yolks and beat up whites before adding. Delicious cold and can just go in their cases in a small cool bag.
