Potato & Leek Soup recipie wanted please?

I use chicken stock cubes (4), 2/3 leeks and approximately 10 small potatoes cut into big chunks, cook until potatoes are cooked and season.... easiest soup to make. You can blend 1/2 lightly if you like it slightly creamy. Think this should be free on green days. I have even used frozen leeks, good freezer standby.
I use equal weight of potatoes and leeks then add one or two carrots add stock to cover (depends how liquidy you want it). I also add garlic a little bit of mixed herb and some extra parsley.
Leek & Potato Soup

1kg (2) Leeks, washed thoroughly
50g butter (low fat)
750g potatoes (6)
2 chicken stock cubes 3/4pint per cube
Salt & Pepper


Finely slice the leeks, discarding any tough dark green outer parts.
Melt the butter in a saucepan over a low heat and add the leeks.
Toss to mix and cook for 10 minutes or until softened.
Add the potatoes along with the chicken stock and bring to the boil.
Reduce the heat to a gentle simmer and cook, covered for 45 minutes.
Remove from heat and blend until smooth.
