Extra Easy Quick Pasta/EE meals needed please

Hubby goes back to work on Monday so will just be me and baby! I'm doing EE but as hubby doesn't like pasta we dont tend to have it but with it just being me at home for lunch I thought I could do pasta lunches but am stuck for ideas.

What quick EE/Pasta lunches do you make?

Your best bet is just to go browsing in the recipe sub-forum or do a search there - there are tonnes of pasta recipes there so you are sure to find something that appeals.

1 teaspoon of easy garlic ( or 1 or 2 cloves crushed, your call )
1 tin of chopped tomatos with herbs ( saves faffing about )
1/2 bag of quorn mince ( or regular mince if you prefer )
1 large onion ( or a reasonable amount of frozen diced onions )
handfull of chopped mushrooms ( you can get bags of frozen sliced ones for ease )
handfull of mixed peppers ( again bags of frozen )
some spinach ( yet again, bags of frozen.. comes in blocks so 2 blocks )

fry the peppers, mince, onions, garlic, and mushrooms in a pan sprayed with frylite
add the toms and spinach and bring to the boil ( should melt the frozen spinach blocks :) )
simmer for 5-10 mins and serve..
( I'm assuming you know how to do the pasta.. :D )

should make 2-3 good portions.. portion out what's left into freezer bags and freeze for another day..
