Made this last night and it was once of the finest risottos i've done ... even the b'f had 2 plates of it 
Ingredients:
Fry light
2 chopped garlic cloves
1 chopped onion
500g risotto rice
1/2 pack of fresh rosemary
1 litre veg stock
Quorn sausages [I used 5] chopped up
Salt & Pepper to taste
Oven cook the sausages first.
Fry light the onion & garlic until soft.
Stir in the rice and rosemary mixing it with the onions and garlic then pour in half of the stock and cook for 10 minutes or so or until most of the liquid is gone.
Add the remaining stock and chopped sausages until the liquid has been absorbed and the rice is tender then eat
