Here is my spinach and sweet potato curry. It's delicious.
4 sweet potatoes peeled and chopped into chunks
900ml vegetable stock
2 onions finely chopped
200gms red split lentils
1 tsp turmeric
2 tsp garam masala
2 large red chillies chopped
2 cloves garlic crushed
Fry onion, garlic and chillies for a few minutes in a large pan or wok before adding lentils, stock and spices. Bring to boil and simmer for 10 minutes stirring regularly. Add sweet potato and continue to cook for further 15-20 minutes or until sweet potato is soft. Chop and stir in spinach (to taste depending how much you like) cook for another couple of minutes till spinach has wilted and serve.
I'm vegetarian so have this on a green day with rice, naan and onion bhaji.
