Red Day RED - Meatball Tagine

This is a recipe by the two hairy bikers (often found on Saturday Kitchen). Its really filling and spicy.

place the following ingredients in a food processor:

500g/1lb 2oz extra lean mince (beef or lamb)
1 onion roughly chopped
3 cloves garlic
2 tsp ground ginger
2 tsp ground cumin
1 tsp chilli powder (more if U like it hot!)
2 tsp paprika
small handful coriander
small handful flatleaf parsley
1 egg yolk

Blitz this all up and make 16 small balls.

1 large onion chopped into strips
400g/1 tin chopped tomatoes
200g/7oz frozen peas (I use chopped asparagus as I don't like peas!)
4 large eggs
fry light

  • spray large frying pan with frylight
  • add onions and cook until translucent
  • add meatballs and brown
  • add the tomatoes, stir and cover
  • simmer for 10 -15 minutes until the sauce has reduced
  • add peas (or asparagus)
  • crack eggs onto the top of the sauce
  • cover and cook for approx 10 mins or until the eggs are cooked to your liking.
Meant to serve 4, but is free on red and in our house usually serves 2!!:D

Sounds yummy (even with my dodgy tum!)! WIll try this - thanks!
the original recipe had a couple of table spoons of honey in the sauce. I leave this out as I couldn't taste it, but you could add it and adjust the syns accordingly.
