Hi this is a recipe which was requested for me to post from juicygooseface!
Here goes hope you enjoy it, I adapted it to my own taste.
Fry light cooking spray
diced onion ( i use ready frozen)
400g can chopped tomatoes
1 level tbsp tomato puree
2 tsp mustard powder
1 tbsp Worcestershire sauce
2 tsp fresh lemon juice ( i used jiffy)
artificial sweetener, to taste ( ( left it out)
salt and pepper to taste
2 large mushrooms
small amount of extra lean mince (85g if on green plan)
42g reduced fat cheddar ( I used cathedral city light) HEB
Prepared the mushrooms and put in oven on 150 for 20 mins.
To make the sauce
Heat a pan sprayed with low calorie cooking spray and saute the oinion over a low heat for 5 mins. Stir in the tomatoes, bring to the boil, reduce the heat and simmer for a further 5 mins.
Add the tom puree, mustard powder, Worcestershire sauce and lemon juice and simmer over a very low heat for 20 mins ( I found it didnt need that long). Stir until thickened.
Stir in the sweetener if you like it, season to taste.
Place mince in micro to cook, then take mushrooms out of the oven and place the mince into the mushrooms and sprinkle with the cheese. When this has melted pour the sauce over the mushrooms and plate up. Enjoy with extra veg, free on all choices, serves 4 (in theory)!!!
