This makes 2 lunches cheap.

1 lidl couscous 0.5 syn or 1 my memory fails me. Cooked. 39p
Bowl or bag of salad £1
Tin of broad beans superspeed! 40p Or you could use butterbeans superspeed or tinned mixed beans. Heated in pan and left to cool ( I'm not sure if you eat these straight out of a can so I heat up)

Put salad then couscous then beans on top, preferred dressing and enjoy £1.80 makes two days worth ;)

CousCous Salad is one of my favorites, really filling meal and tastes lovely!

Serves 3-4

100g CousCous
1 Chicken Stock Cube & Hot Water to cover CousCous
1 Red Pepper
1 Yellow Pepper
1/2 Cucumber
1 Bunch Spring Onions
Feta Cheese (Optional) HexA
1 tsp Pesto Sauce (3.5syns)
Season with Salt & Pepper

I count this as 1 syn as this usually splits 3 or 4 ways.
 
Crunchy Noodle Salad is really nice (the left overs are nice stir fried with chicken)
The recipe is on the Changs Fried Noodles packet which we get from Woolworths in the Asian food isle...

I can type the recipe on here later if anyone wants it... (it has celery, capsicum, chinese cabbage, noodles, dressing, shallots - YUM)
 
Woolworths, capsicum that sounds like New Zealand. We don`t have woolworths here anymore. Just wondering?
 
I eat salads pretty much every lunch time and they tend to be the same! Normally iceberg mixed with a bag of mixed leaves, cucumber/tomato etc.
I then add extras such as tinned potatoes, cooked beetroot, egg, pasta.

Then toppings such as - beef pastrami, tuna, smoked salmon

:)
 
An anyone give any ideas for salads? Pref as syn free as possible

Getting sick of the same old salads

A friend gave me a recipe for beetroot chutney, easy to make and delicious, we have it with salads, cold meats, on sandwiches etc
One pack cooked beetroot
One packet sugar free jelly granules
250 mls malt vinegar

Chop beetroot up into very small pieces, make up jelly with 250 mls boiling water, stir well then add the vinegar.
Pour over beetroot and mix well.
Stores in the fridge
 
I also add sliced turkey, chicken, jalepenos and pimento peppers- just for a change! Some lovely ideas here!

I must try it with cous cous! I put rice in my salad for tomorrow! :)
