Hi. I've tried to make the pepper steak twice now and each time the sauce has curdled tho I've warmed it really slowly. Any ideas on what I may be doing wrong?
 
you need to add your dairy at the very last moment. start by cooking everything else that's in the sauce till you're happy with it, then take it off the heat and let it cool for a few minutes. only then add your dairy, stir it in and if it's cooled too much then put it back on a very low heat and keep stirring while it gently warms, but don't allow it to get too hot.
