Snacks Scotch Eggs

To serve 2 people:
2 hard boiled eggs
4 syn free sausages
1 x HE-B allowance of Wholemeal breadcrumbs seasoned with salt, pepper and herbs to taste
1 egg beaten
Fry Light

Take the skin from the sausages and mould 2 around each egg.
Dip in egg then roll in breadcrumbs twice.
Spray with Fry Light then cook in a preheated oven at 180 deg for 1/2 hour

i just cooked these and they were AMAZING, i say were as I made 6 and we have managed to eat them all already!! deffo recommend them! a bit messy making them tho!! x

I've made these without the crumbs and they are still good.....saving the HE

Like the idea of using mince......great mixed with spices/curry powder so they are kinda spicy
