You will need:
Passata or tom puree
takes about 15 mins
1. chop up veg and add to frying pan with frylight and cook until soft.
2. add tinned toms and passata cook for a further 5 mins (add some sweetner or herbs at this point if u want)
3. make 4 wells in the sauce mix and crack into each well an egg and gently simmer for 5 mins spooning the tom sauce over the egg until cooked!
the eggs may look a funny pinky red colour but it will tast ace!!
serve with rice, toast or a toasted pitta!!
It also makes a lovely breakfast!
