You can use any of the minced meats, beef, pork, lamb or chicken to make these. I tend to use lamb.

500g/ 1lb 2oz minced lamb
1 medium onion
1 egg
4 cloves garlic
small bunch of coriander
1" piece of fresh ginger
2 green chillies
1 tsp chilli powder
1 tsp ground cumin
1 tsp ground coriander
1/4 tsp ground cloves
salt to taste.

Place the mince in a bowl and loosen with fingers. Add the egg.
Chop the onion and garlic cloves, peel and roughly chop the ginger.
Wash and pat the coriander dry and roughly chop.
Wash and de-seed the chillies (or leave the seeds in if you prefer them hot!)
In a food processor blend the onion, garlic, ginger an chillies to a paste.
Add to the mince and combine with all the spices. Mix until well blended.
Pre-heat grill to medium/high setting.
Roll the mixture into a sausage shape and grill for 15-20 mins turning occassionally until cooked through.
Serve with lemon wedges and salad.
