Pork isn't on the allowed list so I prefer not to have it. Maybe check the nutritional (fat/carb) content of chicken versus lean pork and if they're more or less the same, I don't see why you couldn't have it. I suppose very lean pork steaks with fat trimmed off are low in fat, lean ham is allowed too, so who knows why not pork?
For your sore throat, how about some (two or three) sugar-free sweets (they still have carbs but I believe are tolerated). Someone with more knowledge will maybe have better ideas. Maybe fish would slide down better than meat too?
