Once again it has been a ling time since I've had a chance to post anything let alone actually follow slimming world! But I will be trying again for the new year ane aim to lose another stone in 2013 :) Wish me luck!
 
The last two days haven't really gone all that well. Yesterday was a bad day as we had a lot of friends over all day and we all snacked and had a couple of glasses of wine... :( The day before that, we had our Xmas lunch with friends. I mare a point of counting all the syns in all the food and cooked my own roast vegetables separately... but I still had a glass of red and a gin and tonic and a helping of each of the deserts (11 and 14 syns respectively)! Today won't be much better as we're visiting family and there won't be a healthy option ane I won't be rude by taking my own food... will do better tomorrow though!
 
Plum Sauce (for Duck Breast)

Serves 2

Frylight
1 Shallot (sliced thinly)
125g Plums (cut into rough pieces)
120ml Beef Stock
25ml Red Wine
Sweetener to taste

Cook the shallot until soft but not browned. Add the plums, stock, and red wine, and sweetener. Cook until slightly reduced and a little thickened. Keep at warm or at room temperature for up to a day, before serving with duck breast.

Dauphinoise Potatoes

Serves 1

Frylight
200g Potatoes
50ml Chicken Stock
50g Fat Free Fromage Frais
20g Cheese (part of hxA)

Peel and slice potatoes thinly. Mix the stock and fromage frais together. Layer the potatoes in an oven proof dish. After layering half, pour over half of the stock mix. Layer the second half of potatoes, and then pour over the last of the mix. Grate cheese on top, and cook until cooked and golden.

Serve both with a grilled duck breast, and some wilted spinach.
 
Not a good day yesterday - wss v stressed, so managed to est a cinnamon swirl pastry, several savoury pastries at lunch, followed by a medium Domino's pizza to myself... :( WILL do better!!
 
Things are gradually looking up. Granted, it's horrible weather outside, and it's cold. But I feel good, sitting at my PC with a huge bowl of homemade butternut squash soup (1/2 Syn for the creme fraice on top). I have still been keeping a food diary, but on my phone (MyFitnessPal) - I find it really helpful. It allows me to keep a record of my calories, as well as make notes on my syns. It allows me to be a bit more flexible - I can worry more about my calorie intake one day, or my syns on a normal day. And it has stopped me overeating as much. I had found that I became a bit stuck in a rut with Slimming World. My problem, it seemed, was being able to overeat on free foods (I was on EE). So I think I've found a happy balance to move forward with. Which seems to be working - I've lost nearly half a stone over the last 6 weeks :)
 
Wow. Bad week, and it's not even half way done. I decided to try and give dieting a break, but stick to healthy eating. I got fed up with counting every calorie, and every syn, so thought that if I gave myself a break, I could have a more enjoyable week, and get back on it next week without feeling too guilty. Big Mistake.
Turns out, I can't help but NOT count every calorie and syn, as I have been doing it for so long now, and all I feel is horrible after indulging... which I do more and more because I am extra busy and extra tired. And it's all excuses, excuses, guilt, guilt, and snacks.

So... Failing to diet. Failing to indulge. Feeling rubbish.

*Takes a deep breath*

Rant over. Right. I CAN do this. No more excuses. I'm back on it.
