I just used up my leftovers to make a soup with as much super free in as poss. It had
onions (2 red ones)
Garlic (2 cloves)
2 leeks
3 sticks of celery
1 potato (diced)
half a bag of sliced greens
some spices (chilli / ginger / coriander / cumin)
salt and pepper
Oxo (beef)
All bunged in with enough water to cover and simmer while I got on with other stuff. Didn't hold out much hope for anything yummy, but it's bloomin' lovely.
It just seems like stuff that's 'okay' normally just turns delicious in a soup. And all those years I thought it would be hard to make it. Doh!
