Spicy Coconut and Lime Rice - 230 calories

    Spicy Coconut Rice
    230 calories per portion
    Serves 4

    1 cup/150g brown basmati rice
    1 cup/250ml low-fat coconut milk
    1 cup/250ml water
    1 tablespoon canola oil
    ½ cup minced onions
    ½ seeded and minced jalapeno pepper (use seeds if you want it hotter!!)
    1 teaspoon minced ginger
    Juice from 1 lime

    In a medium sauce pan, mix together together the rice, water, and coconut milk. Bring to a boil over high heat.

    Reduce the heat to low, cover, and simmer for 50 minutes or until fluffy and all the liquid is absorbed.

    Meanwhile, heat the oil in a sauté pan over medium heat and sauté onions and jalapeno pepper until translucent and tender; do not burn. Remove from heat.

    When rice is finished cooking, add ginger, sautéed onions and peppers, lime zest, and lime juice, stir to combine, and serve.

    This sounds yummy, but is it right for 150g rice for 4 people? x

    That's the amount for doing it like this, yes. If you want more and have more calories you can make more. It's a pretty average portion size I think, especially for those calorie counting.
