stuffing my veggies

Well after getting all my cheap veggies from Lidl I have made a seletion of stuffed veggies,mushrooms pointed peppers ,aubergines and courgettes. I made a couple of fillings using rice and onions and chopped up veggies,fresh herbs and made a crust with crushed scan bran and lowfat cheese. Really nice change , and there is plenty to freeze for an easy meal.
If you were to stuff veggies what would you put it them?

Oooo sounds nice! I love stuffed bell peppers, stuffed beef tomatoes and stuff mushrooms...unfortunately only had them eating out where filling wasn't good for you lol xxx
Couscous would be nice, ideally seasoned.


Finding inspiration
Most of the stuff you scoop out of the veggies can be chopped up and used as a filling for the others. Maybe use quorn mince to make a sort of "beefy" rice and veg filling for peppers. Or use a lamb stock cube (now that it's free - yay!) with quorn mince to make a sort of moussaka filling for an aubergine, cover with a white sauce from any of the various SW recipes, add an egg to the sauce firm it up a bit when it bakes, top with a HexA of cheese and have a SW friendly baked moussaka stuffed aubergine?
