SW the Vegan or Vegetarian way....

Parapluies, are we all struggling this weekend?... I will get back on track on Monday, I've decided.

I was quite happy though that I could hardly stomach the coq a vin, it was so fatty and meaty. I felt sick afterwards. My stomach is getting used to goodies! :-D
I want some yellow lentils now LOL.

Sunflower what was the prob with SW originally, too repetitive as vegan?

The problem was better the devil you know! You always think the grass is greener on the other side but when you get there it never is :)
 
Well, after a challenging week with three nights out I've still managed to lose 2lb phew! Looking forward to a more manageable week! How has everyone else done?
 
I cooked tofu. A 4th attempt and much better done in a pan. Still not quite cracked it but I'm nothing if not dogged!!
 
I had the Masala Baked Tofu from Appetite for Reduction last night. I am ashamed to say that my flatmate and I ate the entire recipe (feeds four) between us. It was all free food, and it was delicious, but still.
 
I just kept it simple and marinated it in soy sauce and honey and pan fried it until caramelised. It was nice. But like you I ate it all. Oh well.....I was hungry. That's my story and I'm sticking to it.
 
It doesn't surprise me it was easier to find, I think we're not very good at catering for vegans in this country. You get things online but there's not many places you can walk into and get stuff.
I was overjoyed to find Holland and Barrett sell making waves products, I was paying £8 in delivery charges to get them off the internet. X

I has a bagel with vegan cream cheese - tofutti with veg and it was gorgeous.
I think they have a full range of tofutti stuff over there.
To be honest I didn't really look as no point since I couldn't bring it back.
The wheat protein was just with the normal flour I think. I can't remember now if it was with a specialist range.
I am using up the seitan from the freezer before I make more
 
I'm still hanging in there with the tofu. I managed a very acceptable noodle and tofu stir fry last week. It's growing on me (not literally - weird) and I will crack it. I have decided though, at this stage, in order to follow the plan the best way for me I am sticking with vegetarianism with elements of veganism rather than totally converting. I'd rather be comfortable with all aspects of my eating than try and shoehorn myself into something I'm not.

That sounds like a sensible plan
 
Eminently sensible! I still am vegetarian even though probably 85% of my meals are vegan. In an ideal world I would like to be vegan, but I don't live in an ideal world. And I figure 85% is better than the alternative.
 
I love that book, it always turns out lovely, I haven't used it since starting slimming world, will get adapting!
 
Hi folks... made this lovely recipe on Friday night and it struck me that it would be so easily adapted to vegan/vegetarianism by substituting the chicken for cajun falafel and the chicken stock for bouillon/veggie stock.

A few tweaks I'd suggest;
- Use the entire pouch of puy lentils, not half
- I used a Tesco mix of bulghar wheat/quinoa and used 200g instead of 100g
- Double the apricot amount - it's worth the syns!!

It's delicious cold too. I had leftovers for lunch today. Def a good one for making a big batch of and dipping into for lunches throughout the week xx
 
Tonight I discovered my new favourite vegetable: kale, or to be more specific, kale chips. Tear kale into bite-size pieces, toss with olive oil and seasoning, and roast in the oven for 10-15 minutes. Oh my god, it was beyond delicious. It didn't even taste like vegetables! I had a huge bowl and could have carried on eating it forever.

I used a tablespoon of oil as a hexB, but I think that was probably too much - next time I would use a teaspoon and syn it. I suppose you could use Frylight but I don't think it would taste the same.
