Sweetcorn and Parsley Soup- YUM!

Hi guys, wanted to tell you about the SW Sweetcorn soup I just made.
It's on the website, but for those that don't have access to it:

SERVES 2

Fry 1 onion and 2 cloves of garlic in fry light for 5 minutes
Add I large tin of sweetcorn and 2tbsp of fresh parsley
Cook for further 3 minutes.
Then add 480ml of vegetable stock and simmer for 10 minutes.
Blend in food processor and add salt and pepper to taste.


I also added half a teaspoon of smoked paprika and 1 tbsp of Philadelphia light garlic and herb (half syn per serving)

So without the Philly it's free, otherwise half a syn.
And it's totally delicious- my OH LOVED it :D
 
Claire can you just say what size tin of sweet corn. Is it the 340g or larger? I normally use frozen.

Sounds fab by the way.
 
I think it was the 340g tin. I don't suppose it matters too much, it just means it'll be thicker if you use more. Happy cooking :) x
