Syn Free Pasta Sauce?

    I want to make a batch of pasta, anyone have any receipes for any interesting syn free or v low syn sauces?

    I'm assuming the only free ones would be tomato based? But feel free to suprise me! :) xxx

    I like to make an arrabiata sauce - really good with penne or spaghetti. You need to save yourself a HexB for it though:
    (For 2)

    Ingredients
    1 tbsp olive oil (half HexB - usually use another tbsp of tasty xtra virgin olive oil with balsamic vinegar to make a salad dressing)
    1 shallot finely chopped (I usually use about 2/3 in the sauce then add the rest to the salad dressing - the balsamic vinegar starts to cure them)
    2 cloves garlic finely chopped
    Chilli flakes (to your taste - usually use half a tsp)
    Passatta (a good quality one - I like Napolina)
    Sweetner
    Balsamic vinegar

    Method
    Slowly fry the shallots in the olive oil, until soft. Add the garlic and chilli and cook for another minute or so, then add passatta, a slug of balsamic and about 1tsp of sweetner (can always add more later)
    Let it reduce down, if it gets a bit thick I often add some of the pasta cooking water. Check seasoning, and sweetness - may need more balsamic or sweetner.
    Toss in cooked pasta.
    This is lovely with HexA portion of parmesan but I quite like it with mature cheddar instead - gives it a nice twang
