Taster Night at SW

I am new to class, this is my 2nd week and we are having a 'taster' nit on Monday.

I want to take something that I can make either in the morning or the nite before (I work on a monday) that will 'keep' really well!

Any simple, yummy and cheap (Im on a budget!!!) ideas will be fab!

How about my sweet potato pancakes - ideal for shrove Tuesday! THey went down a storm at my class a few weeks ago! I made double the batch and cut them in half and they disappeared!
