Thai Curry

Thai Red Prawn Curry
for 2 ppl
2 red onion [0pp]
1 clove garlic [0]
1 sweet pepper [0]
1 chilli (optional) [0]
200g king prawns cooked defrosted [4]
100 ml light cocnut milk [2]
2 tsp red curry paste [2]
chopped fresh coriander - to taste

fry onion and garlic with curry paste with a few sparys of fry-lite for a few minutes, then add pepper and chilli and coconut milk and cook for about 3 minutes. add the prawns and most of the coriander just keep a little back to garnish. once the prawns are heated through. serve with the rest of the coriander. 4 pp each.
