The big eat no syn omelette

3 eggs
Prawns.
1 peppers small dice
1/2 onion small dice.
1/4Courgette peeled and small dice.
3 medium mushrooms sliced.
1 medium sized potato sliced thinly.
Salt, pepper and mixed herbs.

Slice potato into thin slices just a bit thinner than saute potatoes would be.
Boil potatoes in unsalted water till nearly cooked cool imediately and rest.(not you the potato).
combine egg with seasoning and mixed herbs.
saute all the veg till just cooked add prawns cook for a futher minute arrange your sliced potato on top.
pour over your egg mix and agitate the mixture carefully for 2 minutes.
flash the top of the omelette under a hot grill and serve with cherry tomatoes. :D
