Cauliflower Gratin (conso)

small cauliflower broken into florets
150ml chicken broth
150ml semi skimmed milk
1tbsp cornflour
20g grated cheddar cheese
20g grated grana padano cheese
salt and pepper to taste
Steam the cauliflower for 5 mins (using microwave steamer). Do not overcook it, it needs to still be crisp.

Mix the cornflour with a little milk and blend well. Stir in the chicken broth and the remainder of the milk. Cook on low heat until thickened (it needs to be quite thick). Leave to cool a bit then stir in all the cheddar cheese and 1/2 the grana padano cheese. Season to taste.

Pour the cheesy sauce over the cauliflower and toss until well coated taking care not to break the florets. Place the cauliflower florets side up into a gratin dish or individual ramekins. Sprinkle with the remaining cheese and bake at 190C until bubbling and browned on top.
