Curries cant be that bad can they?? Especially if you avoid the take aways and the jars and make your own from scratch. Actually, a couple of weeks ago one sunday afternoon I was bored so I made some curry sauce, put in into takeaway cartons and put it in the freezer for when I'm eating again. This was my recipe -
1 large onion
1 bulb of Garlic peeled and finely chopped
Ginger finely chopped
3 Fresh chillies sliced
10 tomatoes chopped
1tsp tumeric
2tsp ground corriander
1tsp garam massala
1tsp ground cumin
Bunch of fresh corriander
Fry the onions, garlic, ginger and chillies in frylight. Once they're soft add the tomatoes and leave to cook for about 10 mins until it it looking like sauce. Add all the spices and leave to simmer for 10 mins. Put the whole lot into a blender and blitz until its smooth. Empty back into the pan and add the fresh corriander. If the mixture is a little thick you can add water to loosen it. Leave it to simmer for around 10 mins then box up and freeze.
I do this on a regular basis (when I'm eating) then just dry fry some chicken breast or prawns or lamb, and add the defrosted sauce, simmer it for while then serve with rice. In actual fact I'd rather have this than a takeaway curry - its nicer and a lot healthier!!
