I had just finished typing up this post when my computer froze (thank you, Mr Gates)

Anyway, I thought I'd share this salsa recipe. I absolutely love it, could drink it straight up! On a PV day it's good poured over everything (ok, maybe I'm exaggerating - not over muffins :))

1 tin whole peeled tomatoes
generous fistful coriander leaves
1 onion
1-2 cloves garlic
1 jalapeno (or more or less, depending on how hot you like it)
crushed red pepper (to taste, also depending on how hot you like it)
salt

Roughly chop onion, coriander, garlic and jalapeno, put in blender and whiz around until finely chopped. Whack in remaining ingredients and whiz until smooth. Adjust seasoning and enjoy! It really perks up a grilled chicken breast or hamburger. For those who can have a celebratory meal, this is gorgeous with tortilla chips! Stays fresh in fridge several days, but in my house it usually doesn't last that long :)
