This may sound boring but it is not it is delicious and on green-days is free. It is filling and yummy if like me you love vegetables.

Scrub as many new potatoes as you would like. Scrape and peel 2 carrots. Put these on to boil. In the meantime prepare however much cauliflower you would like. Preheat the oven to a medium heat and dry roast chunks of red pepper, butternut squash and onion.

When the potatoes and carrots are parboiled drop in the cauliflower and cook until aldente.

Mix oregano with chopped tinned tomato and when hot stir in a chicken stock cube ( no need for salt ).

I then put all of the ingredients in a casserole dish with the halves of potato on the top and cook until the potatoes have gone crispy.

It is delicious, you can eat it on it's own or serve with rice or pasta.

I make enough for 2 days as my husband does not do " healthy "

I know you will enjoy it. Are you a vegetarian ??? I am not but love vegetables and fruit so find the green days suit me.

I do miss cheese though and really enjoy my 28grms. of mature cheddar.
