What have you just eaten??

Was at the pub for lunch so it was ham salad and melon pieces for after x

Syn free cheese scone? Ooo tell more xx

Nicked from the recipe threads:

Mix together 3 eggs, 1 tub of fat free cottage cheese + 1 packet of intant mash until it looks like dough (add water if necessary). Then shape into scone shapes (I made 6) and put on a fry lighted baking tray and bake for 20 - 25 mins at 180 :)

It was ok. I forgot to say add salt & pepper.

Also, I had to guess the amount of potato powder as we have a tub of it so I think my mixture was a bit wet! They taste like a cross between a scone and a potato croquet (sp?) and I haven't had one of those in years!!!

Anyway, with some cheese triangle on they taste like a proper cheese scone!!!! And syn free :)

Yesterdays food..............

Pete’s Harissa Coated Chicken with Roasted Veg

Serves 2
Ingredients
2 chicken breasts
1 onion, cut into 4
1 leek cut into 2cm pieces
1 carrot cut into 2cm pieces
1 potato, cut into 4
1 jar of Harissa Paste
Cajun Seasoning
4 rashers of smoked bacon
Method

Wrap the chicken with 2 slices of smoked bacon with the fat removed. Coat the chicken with the Harissa paste and place in an ovenproof dish, sprayed with Fry Light, and set aside.

Coat the potatoes with Cajun seasoning. Prepare the other vegetables and put them into an ovenproof dish, sprayed with Fry Light, place into an oven preheated to 180c for 30-40 mins or until the veg are cooked.

After 15 mins place the chicken into the oven.

Serve with a bowl of salad.

Spaghetti carbonara


Serves 2
Free on Extra Easy

Ingredients

175g dried spaghetti

* use either

2 rashers of smoked bacon, chopped into small pieces
Or
Sainsbury’s wafer thin honey roast ham, chopped into small pieces

2 eggs
1 150g Tube of Primula cheese light
Handful of fresh chives

Method

Cook spaghetti as per packet instructions 8 mins =”Al Dente”

*Use either

Cook the Bacon in a dry frying pan until done then remove and put to one side.
Or cut the ham into small pieces and put to one side.

Break 2 eggs into a bowl and beat them together along with seasoning, chopped chives and the complete tub of Primula cheese light.

Remove and drain the spaghetti then return to the saucepan, add the contents from the bowl and stir gently over a low heat until the eggs have set.
