Yesterdays Recipe

Pete’s spicy cheesy baked potatoes with sticky sausage

Serves 2

Ingredients
2 large potatoes
56g low fat cheddar, grated (2xHea)
1 tbsp turmeric
1 tbsp. Cajun powder
1 tbsp runny honey 2.5 syns
1 tbsp balsamic vinegar
1 tbsp dark soy sauce
2 rashers of smoked bacon chopped into small pieces
4 Sainsbury’s “be good to yourself” extra lean Cumberland sausages 0.5 syn each
Side salad (s)
410g tin of baked beans (ss)

Method

Prick the potatoes with a fork and spray with Fry Light, run sea salt over the skin, place in a microwave, cook for 5-10 mins, (depending on the wattage of the microwave) until part cooked.

Remove from the microwave and cut in half and carefully (very hot), remove as much of the potato inner keeping the outer skin intact, place in a bowl.

Cook the sausages in a shallow frying pan sprayed with Fry Light until browned, add the runny honey, balsamic & soy sauce. Keep rolling in the mixture until they are sticky and dark brown.

While the potatoes are cooking fry the chopped bacon until crisp, remove and add to the bowl with the potato, add cheese, turmeric, Cajun and season with salt & pepper.

Mix well and return to the potato skins.

Place in a hot oven at 180c for 10-15 mins until the potato has fully cooked and the cheese is bubbling, serve with the sausages, beans & a side salad.

Back to it tomorrow! Have had pretty tough time recently but shouldn't use that as an excuse.

It is so easily done though,I've been there ,done it and worn the t-shirt lol :)
 
Leftover sw rich spaghetti bol with grated cheese as my he. Yummy!
 
Used some of my syns for lunch for a tin of weightwatchers tomato soup it's made by Heinz and tastes nearly as good as their regular tomato soup yum yum 3.5 syns for the whole tin :)
Also had 2 ryvita topped with Phili light & pickled onions and some tomatoes and a weightwatchers yoghurt . Very nice . Been really hungry the last few days .
 
A cherry tomato and 2syns worth of olives...wish dinner would cook quicker!
 
Todays experimental recipe is Beef stroganoff, went and bought the ingredients yesterday in case it snowed. will publish it if it is a success, so watch this space!
 
Here is the first effort!
Friday's Dinner................

Pete’s Beef Stroganoff
Serves 4
Ingredients
400g Sainsbury’s extra lean casserole steak, sliced into strips
2 onions, sliced (s)
2 garlic cloves, finely chopped
150g button mushrooms (s)
1tsp paprika
1tbsp Worcester sauce
1 Knorr herb stock pot
1 Knorr beef stock pot made into 250g stock
1 pack of Schultz garlic, mushroom & cream sauce (4.5 syn/4=1.125 syns each)
350mL skimmed milk (3syn/4=0.75 syn each)
300g long grain rice
1 chilli, finely chopped & de-seeded (s)

Method

Place the beef into the freezer for 30-45 mins to stiffen it, remove & slice into thin strips, cook dry in a frying pan until browned, remove & set aside.

Spray the frying pan with Fry Light and sweat the onions, chilli & garlic, add the button mushrooms & cook for a few minutes, add the Knorr Herb stock pot, mix well until the herbs are infused.

Add the beef, mix well, and add beef stock. Make up the sauce mix as per the instructions on the packet and when it starts to thicken, add to the beef & mushrooms, mix well add the paprika, (At this point you could place ingredients in a slow cooker and leave to slow cook.) seasoning & cook for 20-30 mins.

Measure the amount of rice required, add 3 times the amount of water, add rice & cook for 20 mins, or until the water has gone, removed when cooked, place in a sieve & place the sieve on the saucepan and cover with a lid, allow to steam for a few minutes, until the beef is ready.

Serve on a bed of rice.

3/4 packet of Sainsbury Value Pasta Shells in a Tomato & Onion sauce (like Pasta N'Sauce) and a massive mixed leaf salad with tomatoes and spring onions Followed by a chipped up banana chucked on a pot of Vanilla Mullerlight - stuffed :)
