I did the bubble and squeak bake yesterday with gammon and poached eggs it was lovely. Sprouts would be nice in it with whatever other veg you've got.

How about boiled then cooked with bacon bits, garlic and chopped onions as a side to some meat?

bubble and squeek, just fry up what ever veg you have all together to a nice mushy consistancy and serve. A bit of brown sauce goes nice with it. Easy peasy!

It's not y own recipe and it is lovely. I even ate some cold and it was yummy I used onions dry fried instead of chives

    Boil and roughly mash potatoes
Boil sprouts, beans, cabbage or any other veg.
    2 eggs
    Quark
    Onion salt
    Chives
    pepper

Mix the potatoes and all the veg. Add in seasoning and 1/2 tub Quark. Beat the two eggs and stir well into mixture. Place in ovenproof dish and bake in a hot oven for 40 mins.

If you have any he's left you could sprinkle cheese over the top

    Bubble and Squeak Cakes

    INGREDIENTS

    454g / 1lb boiled potatoes
    227g / 8oz cooked green vegetables
    2 garlic cloves, crushed (optional)
    salt and ground black pepper
    1 level tsp flour
    Fry Light, for spraying

    INSTRUCTIONS

    1. Mash the boiled potatoes and the green vegetables for a coarse texture. If you prefer a smootehr finish, you can whizz them briefly in a food processor.
    2. Stir in the garlic (if using) and seasoning. Shape into a long cylinder, about 5cm (2in) in diameter and cut into rounds. Dust lightly with flour.
    3. Spray a ridged cast iron grill pan with Fry Light and heat gently. Cook the potato cakes for a few minutes on each side until crisp and brown. Alternatively, bake the potato cakes in a preheated oven at 180C/350F/Gas Mark 4 for 15 minutes.
