Whats a Mim?????

It stands for Muffin in a Minute and is a sort of bread like thing made from ground flax seed. Very nice and lots of different ways you can have it.

Yep on induction, just count the carbs - flaxseed really varies. Flex Flax claims to have none and you can buy it online, try Amazon - or go for Neals Yard from Holland and Barrett, the brown ones are 0.7 g carbs per 100g.

Try them out but keep an eye on whether they stall you or not. I love making the basic mixture up in a square tupperware dish, add a bit of water and it usually rises enough to give you two slices of 'bread' all ready to toast - or fry in butter, very nice, then load up with cheese and marmite (Bren's favourite word :))

Lots of people like making choc or cinnamon ones with cream.

I usually only have one a week.
