whats for lunch

Opted for a jacket potato with tin mushy peas sbd heA of low low cheese grated on top! :)
 
Just some cottage cheese and grapes today
 
Lunch is going to be pan fried garlic shrimp in spray oil (I am on such a shrimp fix this week), with plain rice, mixed vegetables and soy sauce.
And maybe an Activia fat free yogurt. And an apple.
 
omelette with peppers, onions, mushrooms and chillis with a salad and low calorie coleslaw! mmmmm!

Ooh that sounds really good! Never though of having chickpea Dahl with a jacket spud!
It makes a nice change from beans and its spicy which suits me very well :)

OMG!! was de-lic-ious!!!! Added some fried mushrooms, onions and leftover chopped gammon from last nights tea!! Diet?? What diet?? Xx

That looks great! How do you do your rice? I've given up with rice, everytime I try I get mushy sticky boiled rice! Horrible!

I learned a tip for cooking rice from my aunts ex fella who is a chef!! No matter how much rice your making always fill the pan with as much water as poss and then drain it at the end when its cooked through, just keep checking it lots, im a bit obsessive when cooking rice lol!! I hate it smooshy too!! And if you give the rice a good rinse before you cook it it removes some of the starch which is what sometimes makes it smooshy!!

And to make the egg fried rice just fry some spring onions in fry lite then add cooked rice and a beaten egg on as high a heat as you can without burning and at the end add a few tspns of soya sauce xx
