when do calories start getting absorbed?

When you eat, obviously you put the calories, sugar etc in your mouth, but at what point do you actually start consuming the cals and fat etc...

I assume it's when your body starts digesting the food. SOme food, like protein need more energy to be digested so will use up more calories in the process. I have also read that carbs are turned into fats to be used as energy by your body - it's all so complicated!
