Wow - Very cheap, quick but tasty curry sauce!!

    Ok got this from the internet today & made some for lunch tomorrow, its scrummy!!

    Red Lentil Curry
    An easy & cheap veggie meal.
    · Frylight
    · 1 onion chopped
    · 1 garlic clove crushed
    · turmeric 1 tsp
    · curry powder 1 tsp (to taste)
    · red lentils 150g rinsed well
    · ½ teaspoon chilli powder
    · vegetable stock 1 pint (may need more)

    Heat the frylight in a large saucepan and fry the onions until brown and soft.
    Add garlic and spices and stir. Add the lentils and 3/4 of the stock and bring to the boil. Simmer for 30
    mins or until lentils are cooked and swollen. Add the rest of the stock if necessary.

    So far I have just added mushrooms to it, but will add quorn piece's tomorrow too.
    It can easily be bulked out with lots of veg too!
