    I just soak it . It doesnt go soft then it absorbs all the milk in the oven. But lots of people just do it on the hob. If you use the milk from your HEa for each portion it's syn free .     I just soak some pudding rice in boiling water for about 30 mins add sweetener then put in milk and nutmeg on top and pop in the oven I check every 20mins and just keep adding milk as the rice absorbs it and give it a stir until its done . Really simple and very filling

    Corn on the cob , make some vegetable kebabs with onion, peppers, mushrooms , salmon is really tasty done on the BBQ just wrap in tin foil and squirt some lemon Juice on it .

    Pasta bakes are always cheap cook some pasta put in a dish , pour over some tinned toms, and add whatever else you like such as mushrooms, bacon , garlic, basil etc and top off with some cheese (using your cheese from your HE allowance.

    Just made this and it's lovely not sure how thick it should be though. Mine was a bit like a custard. Just put in fridge so it might thicken up a bit there. Think I'll add another lemon to it next time . A good base for lots of different deserts as well as a spread .
