asian coleslaw with peanuts and chilli

Mmm had this recipe with my veg box this morning and it looks lovely and very healthy. Just have to syn a couple of things but once divded between a few people won't be bad at all!



Ingredients

  • 500g kohlrabi (or white cabbage), finely shredded
  • 3 carrots, coarsely grated
  • 2 apples, grated
  • 1 red pepper, sliced
  • 100g beansprouts (optional)
  • 1 tomato, chopped
  • 2 tablespoons crushed roasted peanuts
  • For the dressing:
  • 1 garlic clove, crushed
  • 1/2 onion, finely sliced
  • 1 chilli, chopped
  • 1 tablespoon Thai fish sauce
  • 11/2 tablespoons brown sugar
  • 3 tablespoons lemon juice
  • a dash of sweet chilli sauce
Method

  1. Combine all the dressing ingredients, either in a pestle and mortar or by whisking them together in a bowl. Set aside.
  2. Mix together all the vegetables, toss with the dressing and pile on a serving plate. Sprinkle with the roasted peanuts.
 
hmmmmm that sounds nice:) syns for peanuts, sweet chilli sauce, brown sugar could be changed for brown splenda aint sure if u need to syn the fish sauce
 
I'm pretty sure fish sauce is free and you could leave out the chilli sauce and use fresh chillis chopped finely instead. And, as you say you could swap the sugar for sweetner.
