banana and carrot muffins (low syn)

Hi,

I just made these and would have posted pics but my daughter had eaten them all before I got a chance.
They aren't the prettiest muffins but I thought they were tasty.
I adapted them from a few recipes I have seen including the banana bread recipe I saw on here.
This is my first recipe post so excuse any mistakes.

Ingredients
100g finely grated carrot (roughly one big carrot)
3 eggs
1 tsp baking powder (1 syn)
28g self raising flour (4.5 syns)
1 mashed banana (4 syns)
28g oats (1 heb or 5.5 syns)
sweetener to taste
1tsp cinnamon

Instructions

Preheat oven to 180 degrees c
1. Separate eggs, whisk eggs whites until stiff
2. Mix egg yolks, with the other ingredients until well combined
3. Fold in egg whites gently until no big lumps. Don't over mix because this will stop the muffins rising.
4. spray muffin tin with frylight and spoon mix into each one, filling almost full
5. Cook for about 20 mins until firm and slightly browned on the top

It made 5 jumbo muffins so I'm guessing 8 cupcake sized muffins?
It is 15 syns for whole batch, or 9 1/2 if you use the oats as a HEB.

I really liked them but maybe they won't be to everyone's taste. You could up the eggs I think to make more muffins without extra syns. I didn't want to use that many eggs but you could go up to 6. Also you could add cinnamon and ground ginger for extra flavour.

Am going to try this today - have been looking for a low syn recipe to use up some bananas and came across this one. I notice this was posted nearly a year ago - are you still doing slimming world or have you reached your goal now? x
