Bombay Bhajis and Cucumer Raita - free on green

These are scrummy...;):D

Fry Light
1 Onion finely chopped
6oz cooked and chopped potatoes
8oz canned chick peas (drained and shelled)
1 beaten egg
1/2 tsp baking powder
2 tsp of bombay mixed spice (I couldn't find this so I used curry powder)
1 tsp mixed herbs
Salt and Pepper

There is also a raita recipe to serve them with:

1/2 cucumber (chop and put in a colander and sprinkle with salt - leave for 30 mins, dry well and transfer to a bowl)
4oz LF natural yogurt
4 chopped spring onions

Add the yogurt and spring onions to the yogurt, chill until ready to serve.

For the bhajis:

Using fry light, fry the onion for 5 mins until tender, transfer to a bowl, add the potato and chick peas, mash together, stir in remaining ingrediants and form 20 small balls.

Arrange bhajis on a baking tray, bake gas 7 for approx 15 minutes and serve wiht the raita.

I have tried these and they are gorgeous - even my husband was a fan. I'd definitely do them again!

I'm thinking of making them and substituting the bombay spice mix and mixed herbs for the herb combination I found in one of SpaceAngel's old posts which is:

1 tsp lemon juice
2 tsp groun c umin
1 tbsp coriander seeds, crushed
1 tsp fresh green chilli, deseeded and chopped
1 tbsp fresh coriander, chopped

I may or may not add some cumin seeds too as I love them. Will let you know how it turns out!
