butternut squash

I find the best way to cut the Butternut is to lay it on its side and cut it into rounds, about inch wide, then its easier to just cut around each round, like you would peel a potatoe. I then cut it into chunks. I love to add some sweetener to mine and mash it up. (suger and a dollop of butter, if your not on a diet!)

A lovely salad that goes very well with a nice hot curry, is to finely grate some butternut and some coursely grated pineapple together. Add some sweetener (or flavoured jelly granules) Served chilled.
 
As i find it hard to peel i prick it with a fork and put it in the micro for a few mins, that way the skin goes soft and is easier to peel.
