OH has just pointed out that if you dissolve carbon dioxide in water you get carbonic acid..... pH 3-5
does this matter? does it effect ketosis? does it matter that I'm drinking so much of it?

No, it doesn't matter. You don't need to worry about carbonic acid, only citric acid (and the jury's not completely convinced about citric acid either...).
Some manufacturers apparently add sodium bicarbonate to their fizzy water in order to get the pH back toward the neutral end of the spectrum.
