Caribbean Beef Stew

We had this for dinner tonight, (posted in the What's for tea tonight) and got asked to put the recipe in here.

Here goes.

1lb beef cubed
1lb pumpkin/ squash cubed
1 onion
1 red pepper
2 garlic cloves finely chopped
1" fresh ginger finely chopped
1 tbsp sweet or hot paprika
1 beef stock cube made up with 1/2 pint of boiling water
1 tin chopped tomatoes
1 tin black eyed beans
1 tin pigeon peas
salt & pepper

I couldn't get hold of a pumpkin so left it out, also didn't have pigeon peas so used a tin of green lentils.

I browned the meat using a couple of squirts of frylite, then added the onion & red pepper left them to soften. Throw everything else into the pot and then left to bubble away.

The recipe book says to then cook it on low for 7hrs (slow cooker), I used my big heavy pan on the hob. I don't think I used enough paprika, bit wary as my two youngest can be a bit funny with seasoning
