Green Day Carrot and Lentil pate - FREE

Serves 2

50g red lentils
50g carrots grated
1// tsp dried thyme
1/2 tsp vecon
1/2 onion finely choppped
1 clove garlic crushed
juice of 1/4 lemon

Put lentils in pan with 250mls water and vecon, bring to boil and simmer uncovered for 10 mins or until lentils are beginning to soften.

Add carrot, thyme mix well and continue to cook for 10 mins or until lentils are totally cooked.

Meanwhile fry onion and garlic in Frylight until golden brown.

Add onions mixture to lentils, mix well then add juice and seasoning. Chill for 1 hour before using.
