Cheese & Ham Chicken Kiev

Ingredients
4 chicken breasts
4 slices of low-fat Cheddar cheese
4 slices of thin-sliced smoked or honey-roast ham
1 egg, beaten
2 tbsp plain flour
A bowl of fresh breadcrumbs


Instructions
1. Preheat the oven to 200C, 400F, Gas Mark 6.
2. Place 4 chicken breasts on a chopping board and slice through the centre of each one to make a pocket.
3. Place a thin slice of Rosemary Conley low-fat Mature Cheese inside the chicken breasts and wrap a thin slice of ham around the outside. Repeat with all 4 breasts.
4. Dust each breast with ½ tbsp flour on both sides (this helps the egg to stick). Dip each breast into a bowl of beaten egg and then a bowl of fresh breadcrumbs to coat all over.
5. Place on a baking tray and cook for 25-30 minutes until the chicken is cooked through. Serve with a leafy salad.
