There mst be one somewhere, I just use grated cheese and let it melt. :)

That's what I do, Jim.

Someone suggested the use of guar gum or xanthan gum for low carb thickening but I haven't yet tried either method.

I have that and tried it, but the cheese sauce was not a success, it's fine for everything else though.

cheese stirred in to double cream on medium heat i think?

i make a lemon sauce like this.. heat some cream and add bit of lemon and sometimes a bit of cheese but has to be served straight away.

Hmm, yes, that would work wouldn't it, you'd have to be careful not to let it come to the boil I'd think.
