I found it quite easy. The best thing is to pour the egg yolk mixture (which is quite runny) into the white and with a clean spatula make slow horizontal figure of 8 movements to mix the eggs. It take a bit longer but means you won't ruin the whites. The resulting mixture is still a little runny but when you put a blob on the baking sheet it flattens a little but not completely lol
