Chicken fajitas with a mint and tomato salsa 270 calories per serving

    Goal Weight:
    Serves 4

    2 large tomatoes chopped
    ¼ cucumber chopped finely
    1 small red onion chopped finely
    2 tablespoons of mint (or coriander) finely chopped
    2 teaspoons of lemon or lime juice
    4 medium soft flour tortillas (warmed in the oven if you want to serve warm)
    175g cooked skinless chicken breast broken into strips
    4 tablespoons of half fat crem fraiche or 0% Greek yogurt
    25g extra mature cheddar cheese grated
    salt and pepper to taste

    Mix the tomatoes, cucumber, red onion and herb of choice together, add the lemon or lime juice and season to taste.
    Lay out the tortillas and put some tomato mix on each. Divide the chicken between the 4 tortillas as top with the creme fraiche or yogurt. Sprinkle with the cheese, roll up and serve with any tomato mix that is left.
