Here's a recipe I found in the little blue folder which I got when I joined WW last week.
Chicken Noodle Soup
Classed as a Filling Food
Serves 4. 2 points per serving
Bring two pints (1.2 litres) chicken stock to boil.
Add 225g uncooked chicken breast slices and cook for five minutes. (I used 225g cooked, sliced chicken breast)
Add 100g dried egg noodles, 4 chopped spring onions, 1 red pepper chopped, and simmer for five minutes.
Stir in 2 tablespoons soy sauce and 1 tablespoon corinader before serving. (I used a small piece of fresh ginger, finely chopped, in place of coriander)
It proved a big hit with the family when I cooked it yesterday, and so easy and quick to prepare.
